Harvest
Hand-picked grapes. Red grenache is harvested around 25th September and Carignan during first week of October. Organic certified farming.
Vinification Process
Cold storage of the grapes for 24 hours. Destemmed grapes, cool maceration during 1 day and fermentation with the skins around 26ºC during 12 days. Aging only in stainless steel tank. Vegan wine.
Testing features
Mallolet red shows a red ruby colour with purple reflections. On the nose, it offers aromas of red fruits with subtle spices. On the palate, it’s fruit-forward with juicy acidity and soft tannins.

Vinification Process
Storage of the grapes to cool down temperature for 24 hours. Pre-fermentative maceration for 6 hours. Fermentation at 16ºC with temperature control and in contact with the fine lees for 3 months. Vegan wine.
Tasting features
White wine that displays a bright, pale yellow colour. On the nose, it offers fresh and expressive aromas of pear, apple and subtle floral notes. On the palate, it is crispy and well-balanced, with refreshing acidity and a smooth finish.

Harvest
Grapes picked by hand during the third week of September. Oganic certified farming.
Vinification
Fast rack-off the free-run juice at low pressure. Then, the fermentation starts at 16ºC. The wine remains in tank until end of February.
Tasting features
Mallolet rosé displays a pale pink colour with bright salmon reflections. On the nose, it is expressive offering aromas of strawberries with subtle floral notes. On the palate, it is crisp and well-balanced with a fruity finish. Its clean and vibrant character makes it easy to drink.
